Cocoa butter equivalent [CBE]
Cocoa butter equivalents are vegetable fats with symmetrical 2-oleochemical triglycerides of C16 and C18 fatty acids, similar to those in cocoa butter. They should be compatible with cocoa butter in the proportions normally used in chocolate.
